The History of the Latke

Latkes, or potato pancakes are shallow-fried pancakes of grated or ground potato, baking soda and egg, often flavored with grated onion or garlic and seasoning. Potato pancakes may be topped with a variety of condiments, ranging from the savory to the sweet, or they may be served ungarnished.

Food historians are not exactly sure when or where the Latke was “invented” but what is well known is they go back more than a century and are associated with cuisines and traditions  of many European and Middle Eastern cultures.

The evolution of the Latke into the twenty-first century… Jonny invents the Latke Press Sandwich

In his search for the perfect sandwich, a vision came to Chef Jonny. What if he substituted  the bread in a sandwich with a Latke (BTW  its  gluten free), and what if this Latke sandwich could accommodate all sorts of meats, veggies, fish or anything else that would normally fit between two slices of bread?

The rest is history, the Latke PressSandwich was born. The finishing touches included adding some fantastic sauces or mustards and warming the Latke sandwich in a Panini press. What comes out is something that cannot be described except by tasting it. Let’s just say the first bite produces an OMG moment. Our friends from Europe to the Middle East will have to come a long way to Seattle for this one…but it’s probably worth it. 

Besides being an expert skier, videographer, dog lover and master sandwich inventor, Chef Jonny, (Jonathan Silverberg) is a graduate of the University of Oregon (1999) and the Scottsdale Culinary Institute (Le Cordon Bleu).  Jonny has been in the food business for over a decade starting out as a line cook working his way to his most recent  position as Head Chef at the highly successful Pomegranate Bistro in Redmond, WA.

His career path has given him the opportunity of working under several award-winning chefs including Robert McGrath (James Beard Award) of the Roaring Fork Restaurant in Scottsdale AZ, and Lisa Dupar of Lisa Dupar Catering in Redmond, WA. His recent experiences in opening up two successful restaurants in the past three years will be invaluable in getting the Napkin Friends truck rolling!
